Steps
1.puree the blueberry blend.
2.whip cream until soft peak forms.
3.whisk egg white until frothy,then add
sugar nad whisk until fluffy.
4.fold cream and follow by blueberry puree into
egg white.
5 add Gelatine into blueberry mixture.

Vanilla seeds 1tsp
Steps
1.Preheat the oven to 160℃.
2.mix egg yolks and 500g cream.
3.500g cream and sugar scald.
4.pour over (2).
5remove the bubbles and discard into ramekins.
6.bake in bain-marie for 30~35 minutes,leave to cool
and chill for 3 hours.
7.sprinkle sugar and use fire torch burn it until caramelized.

Sugar 100g

Orange juice 15ml
Grated rind of 1 orange
Steps
1.preheat the oven to 200℃ and grease two baking sheets.
2.cream the butter & sugar until light and fluffy.
3.add the yolks,orange juice and rind mix.
4.add flour,salt and baking powder mixture and stir until
it forms a dough.
5.rolol spoonfuls of the dough into balls.
6.press down with a fork to flatten,bake for 15~20 minutes,
until golden brown.

1.preheat the oven to200℃
2.mix butter and icing sugar until fuffy and light
3.add the egg unitl mix
4.add chocolate chips together
5.add Cake flour,Cocoa Powder,Baking soda and Salt until mix
6.use spoon scooping onto baking sheet
7.bake for 15~20 minutes,remove the baking sheet and cool
